  3. Add zucchini, red bell pepper, and cherry tomatoes to the skillet. Cook for 5-7 minutes until vegetables are tender.
  4. Add cooked barley to the skillet and mix well.
  5. Stir in fresh parsley, lemon juice, salt, and black pepper.
  6. Cook for another 2-3 minutes until flavors are well combined.
