Vegetarian Barley Toss
Barley is one of the oldest cultivated grains and has been used as a food source for thousands of years.

In a saucepan, bring vegetable broth to a boil. Add barley, reduce heat, cover, and simmer for 20-25 minutes until barley is tender.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.

Add zucchini, red bell pepper, and cherry tomatoes to the skillet. Cook for 5-7 minutes until vegetables are tender.

Add cooked barley to the skillet and mix well.

Stir in fresh parsley, lemon juice, salt, and black pepper.

Cook for another 2-3 minutes until flavors are well combined.

Remove from heat and let it rest for 5 minutes.
