Quinoa Salad With Baked Marinated Tofu
Quinoa is actually a seed, not a grain, and it is considered a complete protein source as it contains all nine essential amino acids.

Preheat the oven to 375°F (190°C).

Rinse the quinoa under cold water and drain well.

In a medium saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender. Remove from heat and let it cool.

While the quinoa is cooking, prepare the tofu marinade. In a small bowl, whisk together soy sauce, lemon juice, olive oil, and minced garlic.

Cut the tofu into cubes and place them in a shallow dish. Pour the marinade over the tofu, making sure all pieces are coated. Let it marinate for at least 10 minutes.

Transfer the marinated tofu to a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the tofu is golden brown and crispy.

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, fresh parsley, and fresh mint.

In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to make the dressing.

Pour the dressing over the quinoa salad and toss to combine.

Serve the quinoa salad topped with the baked marinated tofu.
