Preheat the oven to 400°F (200°C).

In a small bowl, whisk together maple syrup, Dijon mustard, soy sauce, apple cider vinegar, garlic powder, and smoked paprika.

Cut the tempeh into thin strips and place them in a shallow dish. Pour the marinade over the tempeh, making sure each strip is coated. Let it marinate for 10 minutes.

Heat olive oil in a large skillet over medium heat. Add the marinated tempeh strips and cook for 2-3 minutes on each side until golden brown.

Transfer the tempeh strips to a baking sheet and bake for 10 minutes, flipping halfway through.

Meanwhile, remove the stems from the collard greens and chop them into bite-sized pieces. Heat olive oil in the same skillet over medium heat. Add collard greens, salt, and black pepper. Cook for 5-7 minutes until wilted.

Serve the glazed maple-mustard tempeh strips with sautéed collard greens. Enjoy!
