Raw cheesecake is a healthier alternative to traditional cheesecake as it is made with natural ingredients and does not require baking.

  1. Soak cashews and almonds in water overnight.
  2. Drain and rinse the soaked cashews and almonds.
  3. In a food processor, blend the soaked cashews, almonds, dates, coconut oil, lemon juice, maple syrup, and vanilla extract until smooth.
  4. Press the mixture into a springform pan to form the crust.
  5. Place the crust in the freezer for 4 hours to set.
  6. Once the crust is set, remove it from the freezer and top with fresh berries.
  7. Return the cheesecake to the freezer and let it rest for at least 6 hours or overnight.
  8. Before serving, remove the cheesecake from the freezer and let it thaw for 10-15 minutes.
  9. Slice and serve chilled.
