Porotos Granados is a traditional Chilean stew made with fresh beans, corn, and butternut squash. It is commonly enjoyed during the summer months when these ingredients are in season.

  1. Soak the white beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, heat olive oil over medium heat.
  4. Add the onion and garlic, and sauté until translucent.
  5. Add the butternut squash, corn kernels, paprika, cumin, oregano, bay leaves, salt, and pepper. Cook for 5 minutes.
  6. Add the soaked beans and water to the pot.
  7. Bring to a boil, then reduce heat to low and simmer for 1 hour or until the beans are tender.
  8. Remove the bay leaves and season with additional salt and pepper if needed.
  9. Serve hot, garnished with fresh cilantro.
