Peel and cut the sweet potatoes into small cubes.

Spread the sweet potatoes on a baking sheet and roast in the oven for 25 minutes or until tender and golden brown.

In a small bowl, whisk together lime juice, honey, and salt.

Remove the sweet potatoes from the oven and let them cool for 10 minutes.
