  2. Trim the Brussels sprouts and cut them in half. Core the apples and cut them into thin slices.
  3. In a large bowl, toss the Brussels sprouts and apple slices with olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
  4. Spread the mixture onto a baking sheet and roast for 15 minutes, or until the Brussels sprouts are tender and lightly browned.
  5. While the Brussels sprouts are roasting, toast the pecans in a dry skillet over medium heat until fragrant, about 5 minutes. Let them cool, then roughly chop.
  6. Once the Brussels sprouts are done, transfer them to a serving dish and top with dried cranberries, chopped pecans, and crumbled goat cheese.
