Wacky Cake is also known as Depression Cake or Crazy Cake. It originated during the Great Depression when ingredients like eggs and butter were scarce.

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Make three wells in the dry ingredients. Pour the vegetable oil into one well, vinegar into another, and vanilla extract into the third well.
  4. Pour water over everything and mix until well combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Once cooled, you can frost the cake with your favorite frosting or enjoy it plain.
