In a large mixing bowl, combine rolled oats, pumpkin puree, maple syrup, almond butter, vanilla extract, pumpkin pie spice, and salt. Mix well.

If desired, stir in chopped nuts and dried cranberries.

Using a cookie scoop or spoon, drop spoonfuls of the mixture onto a lined baking sheet.

Flatten each cookie slightly with the back of a spoon.
