  1. Rinse the grape leaves and set aside.
  2. In a bowl, combine the rice, diced tomato, diced onion, chopped parsley, minced mint leaves, lemon juice, olive oil, salt, and black pepper.
  3. Place a grape leaf on a flat surface and add a spoonful of the rice mixture in the center.
  4. Fold the sides of the leaf over the filling and roll it tightly.
  5. Repeat with the remaining grape leaves and filling.
  6. Place the rolled grape leaves in a pot and add water to cover them.
  7. Bring the water to a boil, then reduce the heat and simmer for 30 minutes.
  8. Remove from heat and let the grape leaves rest in the pot for 10 minutes.
  9. Serve the veggie grape leaves warm or at room temperature.
