Heat oil in a pan and sauté onion until translucent.

Add mixed vegetables, cumin powder, coriander powder, turmeric powder, salt, and green chilies. Cook until vegetables are tender.

Add lemon juice and fresh coriander leaves. Mix well.

Warm the chapatis and place the vegetable mixture on one side of each chapati.

Roll up tightly and secure with a toothpick.

Grill the roll-ups on a pan until they are crisp and golden brown.
