  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the coconut sugar, coconut oil, almond milk, vanilla extract, and apple cider vinegar to the bowl. Mix well.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the vegan chocolate chips.
  7. Line a muffin tin with cupcake liners and fill each liner about 2/3 full with the batter.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  9. Remove from the oven and let the cupcakes cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
