Vegan Banana Cupcakes
Bananas are a great source of potassium and fiber, making these cupcakes a healthier alternative to traditional ones.

Preheat the oven to 350°F (175°C).

In a large bowl, mash the ripe bananas until smooth.

Add the coconut sugar, coconut oil, almond milk, vanilla extract, and apple cider vinegar to the bowl. Mix well.

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the vegan chocolate chips.

Line a muffin tin with cupcake liners and fill each liner about 2/3 full with the batter.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Remove from the oven and let the cupcakes cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
