Cook the couscous according to package instructions. Set aside.

In a large skillet, heat olive oil over medium heat. Add sliced red onion and sauté until softened.

Add diced summer squash to the skillet and cook until tender.

Stir in cherry tomatoes and cook for another 2 minutes.

In a small bowl, mix lemon juice, salt, and black pepper.
