Peel and chop the beetroot, potatoes, carrots, onion, and garlic.

In a large pot, heat some oil and sauté the onion and garlic until fragrant.

Add the beetroot, potatoes, carrots, and cabbage to the pot and cook for a few minutes.

Stir in the tomato paste and vegetable broth.

Add the bay leaves, dill, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat and simmer for about 45 minutes, or until the vegetables are tender.

Remove the bay leaves and let the borscht rest for 10 minutes.
