Peel and slice the carrots into thin rounds.

Finely chop the onion and mince the garlic.

Heat the vegetable oil in a large skillet over medium heat.

Add the chopped onion and minced garlic to the skillet and sauté until softened.

Add the sliced carrots to the skillet and cook for 5 minutes, stirring occasionally.

Pour in the water and season with salt and black pepper.

Bring to a simmer, then reduce the heat to low and cover the skillet.

Allow the carrots to simmer for 15 minutes, or until they are tender.

Remove the lid and continue cooking for an additional 5 minutes to allow any excess liquid to evaporate.

Garnish with fresh parsley before serving.
