  1. In a saucepan, combine the soy milk, granulated sugar, and agar agar powder. Stir well.
  2. Bring the mixture to a boil over medium heat, stirring constantly. Once boiling, reduce the heat to low and simmer for 5 minutes.
  3. In a separate saucepan, combine the water and ginger. Bring to a boil, then reduce heat and simmer for 10 minutes to infuse the ginger flavor.
  4. Strain the ginger-infused water into a bowl, discarding the ginger.
  5. In the same saucepan, combine the strained ginger water and brown sugar. Stir well and bring to a boil. Once boiling, reduce heat and simmer for 5 minutes to create the ginger syrup.
  6. Pour the soy milk mixture into individual serving bowls or ramekins. Allow to cool for a few minutes, then refrigerate for at least 2 hours to set.
  7. To serve, drizzle the ginger syrup over the chilled soy pudding.
