Rinse the rice in cold water and cook according to package instructions.

Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, and cook until soft and fragrant.

Add mushrooms to the skillet and cook for about 5 minutes, or until they release their moisture.

Stir in soy sauce, maple syrup, salt, and black pepper. Cook for another 2 minutes.

Add cooked rice and vegetable broth to the skillet. Stir well to combine all the ingredients.

Cover the skillet and cook for about 10 minutes, or until the rice absorbs all the flavors.

Remove from heat and let it rest for 5 minutes.

Garnish with chopped green onions before serving.
