  2. Wash and scrub the sweet potatoes, then cut them into cubes.
  3. In a large bowl, toss the sweet potato cubes with olive oil, cumin, chili powder, salt, and black pepper.
  4. Spread the seasoned sweet potatoes onto a baking sheet and roast in the preheated oven for 25 minutes, or until they are tender and slightly crispy.
  5. While the sweet potatoes are roasting, heat olive oil in a skillet over medium heat.
  6. Add the diced red bell pepper, red onion, and minced garlic to the skillet. Sauté until the vegetables are softened.
