Sweet Potato Lime Guacamole

Peel and dice the sweet potatoes. Boil them until tender, then drain and let cool.

Mash the sweet potatoes in a bowl until smooth.

Cut the avocados in half, remove the pit, and scoop out the flesh into the bowl with the sweet potatoes.

Squeeze the juice of the lime into the bowl.

Finely chop the red onion and fresh cilantro, and add them to the bowl.

Add the salt, black pepper, garlic powder, ground cumin, and chili powder to the bowl.

Mix everything together until well combined.

Serve the sweet potato lime guacamole with tortilla chips or as a topping for tacos, burritos, or salads.
