Crispy Gluten-free Vegan Cheese Borek

Preheat the oven to 180°C (350°F).

In a pan, sauté the onion and garlic in olive oil until translucent.

Add the spinach and cook until wilted.

Remove from heat and let it cool.

In a bowl, mix the vegan cheese, parsley, salt, and black pepper.

Add the cooled spinach mixture to the cheese mixture and mix well.

Take a rice paper sheet and dip it in warm water for a few seconds until it softens.

Place a spoonful of the cheese and spinach mixture on one side of the rice paper sheet.

Fold the sides of the sheet inward and roll it up tightly.

Repeat with the remaining sheets and filling.

Place the rolls on a baking sheet lined with parchment paper.

Brush the rolls with olive oil.

Bake for 20 minutes or until crispy and golden.

Remove from the oven and let them rest for 10 minutes.
