  1. Heat olive oil in a pot over medium heat. Add the chopped onion and minced garlic. Cook until softened.
  2. Add the sliced carrots and vegetable stock. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the carrots are tender.
  3. Remove from heat and let it cool slightly. Use an immersion blender or transfer to a blender to puree the soup until smooth.
  4. Return the soup to the pot and stir in the coconut milk. Season with salt and black pepper.
  5. Cook over low heat for another 5 minutes, stirring occasionally.
  6. Serve hot and garnish with fresh herbs if desired.
