  1. Cut the eggplant into bite-sized pieces.
  2. In a bowl, mix the cornstarch with a little water to make a slurry.
  3. Heat 2 tablespoons of vegetable oil in a pan over medium heat.
  4. Add the eggplant and stir-fry until it is slightly browned and softened.
  5. Remove the eggplant from the pan and set aside.
  6. In the same pan, add the remaining 2 tablespoons of vegetable oil.
  7. Add the garlic and ginger and stir-fry for a minute.
  8. Add the red and green bell peppers and stir-fry for another minute.
  9. Add the pineapple chunks and stir-fry for a minute.
  10. In a small bowl, mix together the rice vinegar, ketchup, soy sauce, brown sugar, and water.
  11. Pour the sauce into the pan and bring to a simmer.
  12. Add the cooked eggplant back into the pan and stir to coat it with the sauce.
  13. Cook for another 2-3 minutes, until the sauce has thickened.
  14. Serve the sweet-and-sour eggplant over steamed rice.
