  1. Heat oil in a pan and sauté onions until golden brown.
  2. Add minced garlic and grated ginger, and sauté for another minute.
  3. Add curry powder, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.
  4. Add cubed potatoes, sliced carrots, green peas, and chopped tomatoes. Stir to coat the vegetables with the spice mixture.
  5. Pour water into the pan, cover, and simmer for 20-25 minutes or until the vegetables are cooked.
  6. Remove from heat and let it rest for 5 minutes.
  7. Garnish with fresh coriander leaves.
  8. Serve hot with rice or bread.
