  2. Slice the tomatoes in half lengthwise and remove the seeds.
  3. Place the tomatoes cut-side up on a baking sheet lined with parchment paper.
  4. Drizzle olive oil over the tomatoes and sprinkle with salt.
  5. If desired, sprinkle dried herbs over the tomatoes.
  6. Place the baking sheet in the oven and bake for 6-8 hours, or until the tomatoes are dried and slightly shriveled.
  7. Remove from the oven and let the tomatoes cool completely.
  8. Transfer the sun-dried tomatoes to an airtight container and store in the refrigerator for up to 2 weeks.
