Preheat the oven to 400°F (200°C).

Peel and chop the sweet potatoes, beets, carrots, and red onion into bite-sized pieces.

In a large bowl, toss the vegetables with olive oil, balsamic vinegar, honey, fresh rosemary, salt, and black pepper.

Spread the vegetables evenly on a baking sheet.

Roast in the preheated oven for 30 minutes, or until the vegetables are tender and slightly caramelized.
