Preheat the oven to 400°F (200°C).

Remove the leaves and trim the stem of the cauliflower, keeping it intact.

In a small bowl, combine olive oil, minced garlic, lemon juice, paprika, cumin, salt, and black pepper to create a marinade.

Place the whole cauliflower in a baking dish and brush the marinade all over it.

Roast the cauliflower in the preheated oven for 45 minutes or until tender, basting with the marinade halfway through.

Remove from the oven and let it rest for 10 minutes.

Sprinkle with fresh parsley before serving.
