In a large bowl, combine the cooked rice, diced tomato, diced onion, chopped parsley, minced mint, olive oil, lemon juice, salt, and pepper.

Place a grape leaf on a flat surface and spoon about 1 tablespoon of the rice mixture onto the center of the leaf.

Fold the sides of the leaf over the filling and roll it up tightly.

Repeat with the remaining grape leaves and rice mixture.

Place the stuffed grape leaves in a large pot and add enough water to cover them.

Bring the water to a boil, then reduce the heat and simmer for 30 minutes.

Remove the stuffed grape leaves from the pot and let them cool slightly before serving.
