  2. Peel and remove the seeds from the butternut squash. Cut it into 1-inch cubes.
  3. In a large bowl, combine the cubed squash, olive oil, chili powder, cumin, paprika, salt, and black pepper. Toss until the squash is well coated.
  4. Spread the seasoned squash out on a baking sheet and roast in the preheated oven for 35-40 minutes, or until tender and slightly caramelized.
  5. Meanwhile, heat a tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes.
