Spicy Butternut Squash

Preheat the oven to 400°F (200°C).

Peel and remove the seeds from the butternut squash. Cut it into 1-inch cubes.

In a large bowl, combine the cubed squash, olive oil, chili powder, cumin, paprika, salt, and black pepper. Toss until the squash is well coated.

Spread the seasoned squash out on a baking sheet and roast in the preheated oven for 35-40 minutes, or until tender and slightly caramelized.

Meanwhile, heat a tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes.

Once the squash is done roasting, remove it from the oven and transfer it to the skillet with the onion and garlic. Stir to combine.

Cook the squash mixture for another 5 minutes, allowing the flavors to meld together.

Serve the spicy butternut squash over a bed of rice or quinoa and top with fresh cilantro. Squeeze a wedge of lime over each serving for added brightness.
