Tender Okara Gnocchi

Boil the potatoes until tender. Peel and mash them.

In a large bowl, combine the mashed potatoes, okara, gluten-free flour, and salt. Mix well to form a dough.

Divide the dough into small portions and roll each portion into a long rope. Cut the rope into small pieces.

Bring a pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface.

In a separate pan, heat olive oil and sauté garlic until fragrant. Add tomato sauce and simmer for a few minutes.

Drain the cooked gnocchi and add them to the pan with the tomato sauce. Toss gently to coat.
