Heat oil in a large pot over medium heat. Add onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.

Add butternut squash, diced tomatoes, vegetable broth, cumin, paprika, oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until squash is tender.
