Preheat the oven to 425°F (220°C).

Peel and cut the sweet potatoes into cubes.

Slice the red bell peppers and red onions.

In a large bowl, combine the sweet potatoes, red bell peppers, red onions, cherry tomatoes, olive oil, lemon juice, minced garlic, salt, and black pepper.

Toss everything together until well coated.

Spread the mixture evenly on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and slightly caramelized.
