Peel and slice the carrots.

Boil the carrots in salted water for 10 minutes or until tender.

Drain the carrots and set aside.

Heat olive oil in a pan over medium heat.

Add the boiled carrots to the pan and sauté for 5 minutes.

In a small bowl, mix together honey, lemon juice, salt, and black pepper.

Pour the honey mixture over the carrots and stir well.

Cook for another 5 minutes, stirring occasionally.

Remove from heat and garnish with fresh parsley.

Let it rest for 5 minutes before serving.
