Slice the zucchini into 1/4-inch thick rounds.

In a large bowl, combine the zucchini, olive oil, garlic, dried thyme, dried oregano, salt, and black pepper. Toss well to coat the zucchini.

Spread the zucchini in a single layer on a baking sheet.

Roast in the preheated oven for 15-20 minutes, or until the zucchini is tender and golden brown.
