Preheat the oven to 400°F (200°C).

Peel and cut the sweet potatoes and carrots into bite-sized pieces.

In a large bowl, toss the sweet potatoes and carrots with maple syrup, olive oil, salt, and black pepper.

Spread the vegetables evenly on a baking sheet.

Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and caramelized.
