Preheat the oven to 425°F (220°C).

Clean and trim the wild mushrooms, then cut them into bite-sized pieces.

Peel the potatoes and cut them into small cubes.

In a large mixing bowl, combine the mushrooms, potatoes, olive oil, minced garlic, thyme leaves, salt, and black pepper. Toss well to coat evenly.

Transfer the mixture to a baking sheet and spread it out in a single layer.

Roast in the preheated oven for 25 minutes, or until the mushrooms and potatoes are golden brown and crispy.

Remove from the oven and let it rest for 5 minutes.
