  1. Peel and chop the butternut squash, apple, and onion.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent.
  3. Add the butternut squash and apple to the pot and cook for 5 minutes.
  4. Pour in the vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes, or until the squash is tender.
  5. Using an immersion blender or regular blender, blend the soup until smooth.
  6. Stir in the coconut milk and season with salt and black pepper.
  7. Simmer for an additional 5 minutes.
  8. Serve hot and enjoy!
