Preheat the oven to 325°F (163°C).

In a large bowl, combine oats, mixed nuts, cinnamon, and salt.

In a small saucepan, melt coconut oil and honey over low heat.

Pour the melted mixture over the dry ingredients and mix well.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, stirring halfway through.

Remove from the oven and let it cool completely.

Once cooled, stir in pomegranate seeds and vanilla extract.
