  1. Drain and press tofu to remove excess moisture. Cut tofu into rectangular slices.
  2. In a saucepan, bring vegetable broth to a boil. Reduce heat to a simmer.
  3. In a small bowl, mix soy sauce, scallions, sesame oil, grated ginger, cornstarch, and water to make a marinade.
  4. Dip each tofu slice into the marinade, making sure to coat it well.
  5. Roll the marinated tofu slices tightly and secure them with a toothpick.
  6. Carefully place the rolled tofu in the simmering vegetable broth and cook for 10 minutes.
  7. Remove the rolled tofu from the broth and let it rest for 5 minutes.
  8. Serve the rolled tofu with a drizzle of the broth and garnish with additional scallions, if desired.
