  1. Wash and dry the okra. Cut off the ends and slit them lengthwise.
  2. Heat oil in a pan and fry the okra until they turn slightly brown. Remove and keep aside.
  3. In the same pan, add more oil if needed and sauté the onions until golden brown.
  4. Add ginger-garlic paste and cook for a minute.
  5. Add chopped tomatoes, green chili, and all the spices. Cook until the tomatoes are soft.
  6. Add fried okra and mix well. Cook for 5 minutes.
  7. Garnish with fresh coriander leaves.
  8. Serve hot with rice or roti.
