  1. Rinse the rice under cold water until the water runs clear.
  2. Soak the saffron threads in 2 tablespoons of warm water.
  3. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic cloves. Cook until the onion is translucent.
  4. Add the ground cumin, ground coriander, salt, and black pepper to the saucepan. Stir well.
  5. Add the rinsed rice to the saucepan and stir to coat the rice with the spices.
  6. Pour in the vegetable broth and saffron water. Bring to a boil.
  7. Reduce the heat to low, cover the saucepan, and let the rice simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove the saucepan from the heat and let the rice rest for 5 minutes.
  9. Fluff the rice with a fork and garnish with chopped fresh parsley before serving.
