  1. Rinse the lentils under cold water.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic. Cook until the vegetables are softened.
  3. Add the lentils, vegetable broth, tomato paste, cumin, paprika, bay leaf, salt, and pepper. Stir well.
  4. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the lentils are tender.
  5. Remove the bay leaf and discard. Stir in the fresh parsley.
  6. Let the soup rest for 10 minutes before serving.
  7. Serve hot and enjoy!
