Heat oil in a pan and sauté the onions, garlic, and ginger until golden brown.

Add the red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Cook for 2 minutes.

Add the mixed vegetables and cook for another 5 minutes.

Add the tofu, coconut milk, orange juice, and orange zest. Simmer for 10 minutes.

Garnish with fresh cilantro and serve hot with rice or naan bread.
