Okra, also known as lady’s finger, is a popular vegetable in Indian cuisine and is rich in dietary fiber, vitamins, and minerals.

  1. Wash and dry the okra. Cut off the ends and slice them lengthwise.
  2. Finely chop the onion, tomato, green chili, ginger, and garlic.
  3. Heat oil in a pan and add the chopped onion. Saute until golden brown.
  4. Add the chopped ginger, garlic, and green chili. Saute for a minute.
  5. Add the chopped tomato and cook until it turns mushy.
  6. Add turmeric powder, red chili powder, coriander powder, cumin powder, amchur powder, and salt. Mix well.
  7. Add the sliced okra and mix until the spices coat the okra evenly.
  8. Cover the pan and cook on medium heat for 10-12 minutes, stirring occasionally.
  9. Remove the lid and cook for another 3-4 minutes until the okra is slightly crispy.
  10. Garnish with fresh coriander leaves.
  11. Serve hot with roti or rice.
