Preheat the oven to 400°F (200°C).

Cut the eggplant into 1-inch thick slices.

In a small bowl, mix together olive oil, honey, red chili flakes, salt, and black pepper.

Brush the eggplant slices with the honey mixture on both sides.

Place the eggplant slices on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
