Place the potatoes on a baking sheet and roast for 25-30 minutes, or until tender.

In the meantime, prepare the vinaigrette by combining minced garlic, olive oil, white wine vinegar, Dijon mustard, fresh parsley, salt, and black pepper in a small bowl.
