Rinse the lentils and set aside.

Heat olive oil in a large pot over medium heat.

Add onion, carrot, celery, and garlic. Sauté until vegetables are softened.

Add lentils, vegetable broth, tomato paste, bay leaves, thyme, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.

Remove bay leaves and garnish with fresh parsley.
