Crispy Chickpea Protein Bowl
Chickpeas are a great source of plant-based protein and are commonly used in Mediterranean and Middle Eastern cuisines.

Preheat the oven to 400°F (200°C). Drain and rinse the chickpeas.

In a bowl, combine the chickpeas, olive oil, smoked paprika, garlic powder, cumin, salt, and black pepper. Toss until the chickpeas are evenly coated.

Spread the seasoned chickpeas on a baking sheet and bake for 25 minutes, or until crispy.

Meanwhile, cook the quinoa according to the package instructions.

In a separate bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, avocado, lemon juice, tahini, and water. Toss until well combined.

Divide the cooked quinoa between two bowls. Top with the crispy chickpeas and the mixed salad greens mixture.
