Preheat the oven to 400°F (200°C).

Cut the cauliflower into florets and place them on a baking sheet. Drizzle with olive oil, curry powder, salt, and black pepper. Toss until well coated.

Roast the cauliflower in the preheated oven for 20 minutes, or until tender and lightly browned.

In a large mixing bowl, combine the roasted cauliflower, lemon juice, fresh cilantro, red onion, cherry tomatoes, almonds, and raisins. Toss until well mixed.
