  2. Slice the cucumber, carrot, and red bell pepper into thin strips.
  3. Spread the avocado mixture on one side of each bread slice.
  4. Layer the cucumber, carrot, red bell pepper, baby spinach leaves, alfalfa sprouts, and sunflower seeds on top of the avocado spread.
  5. Close the sandwiches with the remaining bread slices.
  6. Cut each sandwich into halves or quarters.
