Traditional clam chowder is a popular dish in New England, but this vegan version replaces clams with plant-based ingredients while still retaining the creamy and comforting flavors.

  1. In a large pot, sauté the onion, celery, carrots, and garlic until softened.
  2. Add the potatoes and vegetable broth. Bring to a boil and simmer until the potatoes are tender.
  3. In a blender, blend the cashews, nutritional yeast, thyme, dill, and some of the cooked vegetables with a little water until smooth.
  4. Pour the blended mixture back into the pot and add the corn, peas, coconut milk, lemon juice, salt, and black pepper. Simmer for another 10 minutes.
  5. Serve hot and enjoy!
